Happy Fall Y'all!



How is everyone doing? We are getting Autumn decor up. The weather is actually fallish this year!

Here is a recipe that I really love. If you love Pecan Pie you'll love this!


Pecan Tassies

Pastry Dough:
8 tablespoons butter
3 ounce cream cheese, softened
1 cup sifted all-purpose soft wheat flour
1 cup chopped pecans

Mix together the butter and cream cheese in a small bowl or food processor. Add the flour and blend thoroughly. Put in refrigerator and chill for 1 hour.

Divide and shape 30 balls. Wrap all 30 balls together in plastic wrap and chill slightly. Place each ball in a tiny ungreased fluted tart pan. You can also use a muffin tin. :-D Line pans by pressing the dough with your fingertips against the bottoms and sides.

Sprinkle chopped pecans over dough and press into.


Filling:
1 egg
3/4 cup brown sugar
1 tablespoon butter, softened
1 teaspoon vanilla
1/8 teaspoon salt

Beat together the egg, sugar, butter and vanilla and salt until all the lumps are gone. Pour the egg mixture onto the pecan topped dough. Dot with the remaining pecans. Bake for 25 minutes or until the filling is set. Cool 5 minutes on a rack and remove from the pans before they are cool, as the caramel will set.

These tiny tarts are SO delicious...you may want to make more than one batch!
They freze well...but just try to get them into the freezer! HA!
These are wonderful for Christmas cookie trays.
